News from the Cheesemonger
Each month we will be featuring three new cheeses from around the world. We invite you come in to the deli to taste these works of art made by artisan cheesemakers, or join our cheese of the month club and take some home to share.
Harbinger
We are proud to be featuring this cheese from Tucker Family Farm in Victor, MT. Head Cheesemaker Allison Dembek produces this beautiful, farmstead, cave aged sheep milk cheese that has been washed with Montana made Draught Works Last Rites Mexican Chocolate Porter. Harbinger has a gracefully smooth texture, a nutty finish, and pairs perfectly with a cider or bold red wine. This cheese has quickly become a customer favorite!
Cabot Clothbound Cheddar
After Cabot Creamery produces this cheese, Andy and Mateo Kehler of Jasper Hill Farm expertly monitor the aging process in their 22,000 sq ft underground facility in Greensboro, VT. Cabot Clothbound is brothy and savory with a crystalline texture and a salt-caramel finish, and pairs beautifully with a Nut Brown Ale, Cider, or glass of Chardonnay. This is the perfect cheddar for your cheeseboard alongside some sliced green apple and Marcona almonds.
Humboldt Fog
Mary Keehn of Cypress Grove Farm on the rural north coast of California began her cheesemaking adventures with this soft-ripened goat cheese. Humboldt Fog is a decadent bloomy rind cheese with a mushroomy rind, gooey cream line, and dense paste. The distinctive layer that runs through the center is made of an edible vegetable ash and allows this cheese to pair beautifully with a dry white wine or an IPA. Try this cheese and see why it has won numerous awards, including a gold medal from the American Cheese Society and a World Cheese Award.
